The Paragon 700 Boutique Hotel & Spa, a restored red palace in the heart of Ostuni—Puglia, Italy’s White City—has opened its doors.
Standing in stark contrast to the whitewashed buildings of Ostuni, the 11-room Paragon 700’s red brick façade cocoons a lush garden and swimming pool as well as a green space in the heart of the city. The hotel also includes Restaurant 700 from head chef Giovanni Cerroni.
The restoration and design were handled by an in-house team to bring to life the former Italian palace using traditional handcrafted techniques, while injecting modern details. French parquet flooring extends throughout all the rooms and suites, which feature stonewashed bed linen, cathedral ceilings, period frescos, and fireplaces. Each guestroom is different, some offering terraces, balconies, or in the case of the Paragon Suite, a sunken bathtub and private terrace with sun loungers. Guests can buy select furniture and décor to take home, and any sold pieces will be replaced by the boutique hotel’s owners.
