55 Hospitality—the team behind New York restaurants Fish Cheeks and Bangkok Supper Club—has unveiled Bub’s Bakery. The new venture is created in partnership with James Beard-nominated baker Melissa Weller.
The completely allergen-free concept pushes beyond a niche category to reimagine what a modern bakery can be. The inspiration stemmed from cofounder Jenn Saesue’s personal search for baked goods that her husband could enjoy without compromise.
Inside the compact Bub’s Bakery
The interiors—courtesy of Thailand-based TASTESPACE—channels a bright, sun-soaked atmosphere inspired by the golden shimmer of Manhattanhenge.
The compact 450-square-foot footprint is arranged primarily for grab-and-go, yet it invites guests to linger with strategic perching zones and seating.
At its core is a striking Yellow Zinc counter, a bold centerpiece that shifts between yellow, pink, and blue depending on the light.
This chromatic material is paired with Amarillo Travertine, a soft, tactile stone that grounds the palette and introduces subtle texture. Together, they form a playful composition that anchors the room and reinforces Bub’s signature yellow identity.
Above, linear ceiling grills filter daylight into geometric shadows that drift over surfaces throughout the day, echoing the sun’s movement and enhancing the bakery’s kinetic glow.
Branding becomes part of the architecture through logo-stamped wall tiles that greet guests at the threshold. A menu wall showcases vibrant custom packaging—designed as take-home keepsakes as much as containers—while guiding circulation toward the counter.
