In Charleston, Cane Pazzo emerges as a heartfelt ode to both Southern provenance and Italian tradition.
The new restaurant from chef-owner Mark Bolchoz, whose family has deep Charleston roots, tells a personal story through seasonal menus built on local ingredients.
Designed in-house by Mark and his wife, Ariana Bolchoz, the interiors draw from Italy’s enduring osterias and taverns, resulting in a space that feels instantly worn-in and familiar.
An arrival with soul
The journey begins in the bar room, where exposed beam ceilings and a deep, moody palette of olive greens and dark wood tones set a grounded, Old World tone.
A large wooden bar anchors the space, its shelves lined with Italian spirits and aperitifs, while a bright red La Marzocco espresso machine adds a vivid pop of European authenticity.
The main dining room at Cane Pazzo
Through an exposed brick archway, the main dining room unfolds. A mix of tables, banquettes, and chef counter seating are oriented to face the open kitchen, where a bronzed-faced wood-fired oven is framed in deep green subway tile, casting a warm glow across the room.
The space embraces a timeworn Italian aesthetic. Antique frames filled with family photographs line the walls, chandeliers diffuse a soft light, and brown leather banquettes invite guests to settle into.
Texture and tone
Terrazzo floors and molding-tiled ceilings add architectural texture, while deep green tongue-and-groove wainscoting ties the palette together in earthy sophistication. These layered details create a sense of place that feels both curated and natural, as though Cane Pazzo has been serving the neighborhood for decades.
An outdoor patio, featuring the same relaxed charm found inside, extends the experience with picnic-style seating.
