The Bellagio Resort & Casino in Las Vegas has expanded its F&B portfolio with the recent opening of Harvest by Roy Ellamar.
The New American eatery is the first culinary concept from locally based chef Ellamar.
“Harvest is my passion project,” says Ellamar. “It has been my dream to create a restaurant on the Las Vegas Strip that highlights the best local ingredients, supports regional farms, and offers sustainable cuisine. The Harvest experience is based on what makes sense for the season as well as what’s trending in the culinary world, so guests can expect to find something new with each visit.”
Accessible via an open-front façade, the restaurant was designed by Gensler and centers on a glass-clad, exhibition-style kitchen. Interiors feature a warm atmosphere with nature-inspired elements, such as wood flooring and paneled walls, which complement hand-blown light fixtures and copper accents throughout.
The resort also recently completed a $165 million revamp last spring that had been ongoing since 2011.
