John Kunkel, CEO and founder of restaurant group 50 Eggs, has expanded his empire with the launch of Spring Chicken. A fast-casual alternative to his popular Yardbird Southern Table and Bar—named a James Beard Awards semifinalist for Best New Restaurant South in 2011—Spring Chicken will open in Coral Gables, Florida, on January 28th. Locations in Miami Beach, Fort Lauderdale, and at Miami International Airport will soon follow.
50 Eggs’ in-house designer Giselle Fernandez conceived the concept for Spring Chicken, collaborating with locally based EoA on some items. It merges an urban, industrial aesthetic with distinct rural Southern influences—including white brick walls adorned with multicolored mason jars, reclaimed wood with whitewash finishes, and a large-scale farmhouse windmill. Communal picnic-style tables with butcher block tops surrounded by country white wooden chairs are juxtaposed with worn-in brown and cobalt leather sofas, while walls are adorned with metal fixtures and lighting. The color palette in the dining room consists of white and gray infused with pops of red, yellow, and cobalt.Â
Spring Chicken is the latest in a stream of restaurant ventures from Kunkel; past successes include Yardbird, Taste Bakery Café, and Lime Fresh Mexican Grill.
