The Austin Proper Hotel has unveiled Kappo Kappo, a refined dining concept that blends the disciplined artistry of Japanese kappo cuisine with the expressive elegance of French technique. Kappo, which translates to “cut and cook,” centers on seasonality and the relationship between chef and diner.

Designed by Kelly Wearstler as a highly immersive experience, the 25-seat restaurant—including 15 seats at the chef’s counter—offers guests a front-row view of each course as it is prepared and presented.
Drawing from traditional Japanese craftsmanship, the interiors are layered with deeply hued charred cypress, illuminated millwork, and stone and metal accents. The palette underscores a philosophy of simplicity and precision while creating a warm backdrop for the dynamic open kitchen, the spatial and experiential heart of the restaurant.
“Every Proper space is meant to tell a story, one that’s deeply connected to its environment, but also full of discovery,” says Wearstler, designer of Proper Hotels. “Kappo Kappo is a beautiful expression of that ethos, where thoughtful design and culinary artistry come together to create something transportive.”
