Seattle-based Seabourn Cruise Line has partnered with chef and Michelin-starred restaurateur Thomas Keller to design a new French-inspired menu for multiple eateries aboard the cruise line’s Seabourn Odyssey, Seabourn Sojourn, and Seabourn Quest ships this fall. Keller will also act as an advisor for the line’s culinary operations.
In particular, the Seabourn Quest will see the addition of a new signature restaurant early next spring before it expands to the brand’s entire fleet, including its two new Adam D. Tihany-designed ships—the Seabourn Encore, to launch in late 2016, and the Seabourn Ovation, to launch in early spring 2018.

In addition to winning the James Beard Foundation’s outstanding chef and outstanding restaurateur awards, Keller has established a collection of 12 restaurants and bakeries and been recognized as the first and only American-born chef to hold multiple three-star Michelin ratings, and chef of the year by the Culinary Institute of America.
