The Balmoral, a Rocco Forte hotel in Edinburgh, Scotland has unveiled its new F&B space Brasserie Prince. Rocco Forte’s director of design Olga Polizzi partnered with London and New York firm Martin Brudnizki on the design of the new concept, which celebrates Scottish and French fusion, drawing its name from Scottish folk hero Bonnie Prince Charlie.
The design comprises traditional Scottish materials such as timber, leather, and wool. A variety of seating is installed, including banquettes and dining chairs upholstered in leather. An adjoining bar and lounge area is anchored by a long, marble bar and a cozy fireplace.
