Fairmont Hotels and Resorts has partnered with chef and restaurateur Richard Sandoval to complete a total overhaul of the F&B program at Fairmont Mayakoba, a resort destination in Riviera Maya, Mexico.
“The opportunity to be back in Mexico and introduce new concepts and creative flavors at Fairmont Mayakoba is a career highlight,” says Sandoval. “The resort is perfectly situated to be the culinary hub of Riviera Maya. I’m thrilled to collaborate and bring my passion for authentic cuisine to our four new restaurants.”
With three of the four eateries already open, the multiphase project is coming to a close next month, and will see each restaurant revamped with a fresh aesthetic and newly curated menu.
Fairmont has so far completed work on the lobby lounge, El Puerto restaurant, and Brisas, a waterfront raw bar and fine dining establishment. The lobby lounge offers guests Latin-Asian small plates and appetizers with the option to eat al fresco on a newly expanded terrace. El Puerto also serves up Latin-Asian cuisine to patrons who may choose from a large indoor dining space, two private dining rooms, or a terrace. Brisas is a seafood restaurant that overlooks the Caribbean Sea from under a palapa and similarly offers a variety of dining space that includes private rooms.
To debut some time next month, the Mexican-inspired La Laguna will feature a tequileria and an open-concept kitchen.
