Hard Rock Hotel and Casino Punta Cana has partnered with chef Kerry Simon to open the Simon Mansion and Supper Club. Debuting in May, the restaurant will mark Simon’s first international restaurant.
Designed by Chicago-based interior design firm 555 International-headed by James Geier-the restaurant design mirrors the home of a rock ‘n’ roll icon. The various rooms-three of which will serve as private dining rooms-mimic a dining room, living room, bedroom, bathroom, library, studio, and patio. Highlights include a broken glass chandelier, oversized throne chairs, reflective artwork, and a central sushi bar.
“Simon Mansion and Supper Club allows me to bring my organic, sustainable, and contemporary culinary approach to the Dominican Republic,” says Simon. “The menu is seasonally driven, focusing on fresh, quality ingredients prepared in an accessible yet dynamic way.”

The menu features fresh sushi as well as a variety dry-aged meats and local seafood that rotate seasonally. A beverage program also incorporates a seasonal structure with complementing wines and beers.
