Kiln restaurant has debuted atop the recently opened Ace Hotel Sydney. Designed by Fiona Lynch Office, the space nods to the history buried beneath the hotel—the site of Australia’s earliest kiln discovery and once a production hub for 19th-century convict and potter Jonathan Leak. “From the outset, Ace wanted it to be an Australian take on what an Ace Hotel could be—one that would reflect Australia’s culture, colors, and design language,” says Fiona Lynch. “Their desire was for Kiln to feel like a distinctly different space within the hotel.”
Wrapped in glass, the 108-seat interior is anchored by an open kitchen and wood-fired hearth as well as a panoramic backdrop of Surry Hills vistas best viewed from Kiln’s two spacious terraces. Native raw materials, including stone and natural timbers, invigorate the restaurant with a rustic authenticity illuminated via custom fixtures. The sustainable materiality also includes linens handpainted with pigment made from salvaged waste materials.
The custom main bar—finished by hand in natural brass and accented with stone, chrome, and aluminum elements positioned in tectonic plate-like angles inspired by Isamu Noguchi—is another focal point. Bespoke banquettes and leather-topped tables line the lounge, which leads to a private dining room as well.
