RPM Italian is the newest entry to debut at the Forum Shops at Caesars Palace in Las Vegas. The 9,000-square-foot eatery was crafted by Shawmut Design and Construction in collaboration with New York-based Rockwell Group and locally based Bunnyfish Studio.
Lettuce Entertain You Restaurants’ the latest concept comprises a main dining room outfitted with standalone seating and booth options in addition to a private dining room and an outdoor patio. A dedicated sommelier bar and an open kitchen also anchor the interior, offsetting a sexy monochrome and marble palette with abundant greenery.
“Our established partnership with Lettuce Entertain You combined with our extensive experience working in fully operational resorts on the Las Vegas Strip provided a solid foundation for our team to seamlessly complete RPM Italian,” says Greg Skalaski, executive vice president of the West region at Shawmut Design and Construction. “Drawing from decades of experience, our team expertly navigated procurement and supply chain related challenges to bring the owner’s vision to fruition. We are proud to celebrate this completion, marking the sixth location for the RPM Brand and sixth restaurant in Las Vegas for Lettuce Entertain You.”
