Now part of Hyatt’s Unbound Collection, the Spanish Mediterranean icon has been reimagined as the 197-room La Zambra, an Andalusian sanctuary with private terraces and warm bursts of terracotta that encourage relaxation more than hedonism. The centerpiece is the nearly 27,000-square-foot dome-crowned Mood Spa, where one of five wellness journeys unfolds against a backdrop of Turkish baths and Jacuzzis.
