Mario Carbone, Rich Torrisi, and Jeff Zalaznick are planning a new location for their Italian-American Carbone restaurant concept. Carbone Las Vegas is set to open this fall within the ARIA Resort & Casino with both a menu and design inspired by midcentury aesthetics.
Rather than replicate the original outpost in Manhattan’s Greenwich Village, Carbone Las Vegas will take inspiration from the history of Las Vegas and the Rat Pack era. Nodding to the era, waiters will be referred to as “captains” and hand-selected by the Carbone family. As part of the restaurant experience, captains will wear 1950s-style burgundy tuxedos by fashion designer Zac Posen.
“Las Vegas and New York had a synergy during that time period,” says managing partner Zalaznick. “The same people who were eating at Rocco’s in New York were eating at the Sands in Las Vegas with similar experiences, including captain-driven service and tableside presentations. Carbone at ARIA will embody that glamorous era of Sin City.”

“Our ARIA restaurant will be larger than the New York location, which offers the opportunity to place an even greater focus on creative tableside presentations,” adds chef Mario Carbone. “These little touches all work together to create a fun fine dining experience. Food is more important to me than anything in the world, but at the end of the day, what I want to do is have a great time with the best food. The possibilities for that in Las Vegas are endless.”
Carbone Las Vegas is scheduled to open on ARIA’s promenade level this October.
