Chef and restaurateur Greg Baxtrom and pastry chef Alex Grunert have come together to launch Evi’s Bäckerei, an all-day bakery and café in the Prospect Heights section of Brooklyn, New York. The new concept was designed and built by Baxtrom and his father Mike, who also served on the construction of Baxtrom’s Olmsted and Maison Yaki restaurants. “We wanted the space to feel timeless and ‘Brooklyn,’” Baxtrom explains. “We didn’t want to jump onto any current trend, but [instead] create a timeless space that would match what we’re offering.”
Original brick columns and floor-to-ceiling windows punctuate the arrival experience. Black and white tiling spans the floor, and the space is illuminated by classic schoolhouse light fixtures. Wooden bread shelving and a long wooden table—both sourced from an Amish carpenter in Pennsylvania—anchors the interior. Evi’s also echoes the agricultural component of Baxtrom’s previous designs with a floral arrangement that nods to his culinary portfolio
