The Fairmont Olympic Hotel in Seattle has completed the latest phase of its revitalization with the launch of a new signature restaurant: The George. Designed by Lázaro Rosa-Violán (LRV), the 4,500-square-foot eatery honors the history of the early 20th-century space it occupies, reinterpreting classic charms through a refreshed lens that embodies “tradition, modernism, poeticism, and warmth,” LRV says in a statement. “Building off of the deep-seated history of the hotel, our choices were informed by the vernacular of George B. Post’s American Renaissance, and the restaurant now has an almost mythic, yet timeless, grandeur to it. From there, we wanted the expression of the George to be one full of energy and a modern kind of refinement.”
Zigzagging hues of pink, green, and black softly burst across the geometric marble floors of the 100-seat dining room. Dark stained wood floors also line the space for balance. Marble and wood also alternate across dining room tables alongside green and pink velvet chairs and a dark wooden banquette outfitted in green leather upholstery and palm-patterned fabric.
Handpainted tiles animate The George’s walls with sketches of maps and maritime iconography, while large pendant lamp chandeliers comprising antique matte brass steel piping and bubble glass warmly light the restaurant. Floor-to-ceiling doors behind the newly constructed 20-seat bar round out the fashionable and eclectic atmosphere.
