This fall, a modern contemporary Japanese restaurant is set to open within Wilshire Grand Center, Los Angeles’ tallest building. Niku X, a yakiniku concept, will feature a design by Chicago-based architecture firm DWDW that comprises a natural, warm palette inspired by the preparation of dishes on the menu. “We wanted to present Niku X in an intimate and elegant way,” says DWDW managing principal De Shun Wang. “We focused on layering the space. The tall ceiling volume brings a calm light and shadow effect. We composed these artisanal elements with the personalized fine-dining experience that gratifies the senses.”
The oak composition of the binchotan where the meat is grilled will inform the use of Japanese oak in the material palette. The wood will be distinguished across a range of interior finishes, including Shou Sugi Ban wall panels, custom metal screens, carbonized textured wallcoverings, and custom graphic patterns inspired by burning flames. Custom porcelain stone will top each table to accent the marblings of the wagyu beef on the menu, while custom dry-agers will serve as entrancing focal points in the Sukiya-style space as they showcase the tenderization process.
