Botanist has debuted at Vancouver’s Fairmont Pacific Rim hotel. Crafted by locally based studio Ste. Marie Design, the restaurant comprises four spaces: a dining room, cocktail bar, garden, and champagne lounge.
Surrounded by glass and indigenous greenery on the hotel’s second floor, the champagne lounge overlooks the lobby. The cocktail bar embraces a dark palette of Italian terrazzo and features curved glass. The connected cocktail lab evokes elements of a commercial kitchen, equipped with a centrifuge, band saw, and a roto-vaporizer. Walled with glass, the adjacent garden is outfitted with a trellis and more than 50 varieties of plant life.
Conceived as an always-bustling space, the dining room is a mixture of limestone, whitewashed woods, and ornate metalwork juxtaposed with pops of plant material found throughout. The layout also encourages interaction between diners with a flowing banquette in a curved ‘S’ shape. A private dining room also accommodates up to 20 guests with views of the main room through its glass doors.
