Los Dos Potrillos has opened a restaurant in Castle Rock, Colorado, marking its sixth outpost and first ground-up location.
Born into a family of 15, Jose Ramirez purchased the family’s first Los Dos Potrillos location in Castle Rock in 2002. The concept has since expanded around the Denver area, becoming a favorite among professional sports teams and locals.
The new outpost’s design, envisioned by Denver-based firm Swan Dive, blends the luxury of a Mexican resort—drawing inspiration from Cabo San Lucas—with the charm of a traditional horse ranch.
The design of Los Dos Potrillos
The journey begins at the entrance of the 9,000-square-foot space, where vibrant Mexican textiles draw eyes to the tortilla-making station. Inside, the main dining space is bright and airy, offering sweeping views of the surrounding mountains.
Additional textiles and expansive leather seating create a sophisticated atmosphere, while large planters holding agave plants separate booth seating. Equestrian details and local horsetail-inspired artwork are paired with furniture and lighting thoughtfully sourced from Guadalajara.
Detailed touches celebrating family and heritage are incorporated throughout the restaurant. For instance, a rope that intertwines with a lattice wood partition between the dining space and bar resembles a lasso, a nod to the rising role of Ramirez’s sons in the management of the restaurant. A communal bar flanked by two horse heads, representative of his two sons, sits at the center of the space as well.
