Restaurateur Ron Rosa has brought Greenwich, Connecticut’s popular Italian restaurant Polpo to South Florida. Polpo Palm Beach will soon open as part of the F&B lineup at the Eau Palm Beach Resort & Spa. Locally based studio Bilkey Llinas Design crafted the indoor-outdoor eatery, which occupies the space formerly inhabited by Temple Orange restaurant, to maximize ocean views and reinforce the sense of luxury that permeates the resort.
“In keeping with Eau’s essence, and given its oceanfront location, we were inspired by water, sand, waves, and ocean-related textures and forms,” says Bilkey Llinas principal Mauricio Salcedo. “The philosophy behind the design aimed to provide the guests with a sense of relaxed and casual luxury with a residential feel—a sophisticated-yet-playful beachfront home away from home.”
With a 14-seat bar functioning as its nucleus, the sleek, modern space echoes the Italian roots of Polpo while also channeling the glamorous bygone era of Palm Beach. Natural stones and sand tones adorn the interior along with ocean blue hues and textured elements. Custom artwork and carpeting enliven the atmosphere with a bespoke quality that incorporates subtle references to coral and waves.
