Famed French restaurant Le Bilboquet has added a sixth location in the Cherry Creek section of Denver, Colorado. Housed within the St. Paul Collection building, the new outpost marks the third collaboration between the 35-year-old brand and Carolina von Humboldt of New York-based firm CvH Interiors. The space is an opulent homage to Parisian bistro culture that balances contemporary and classic forms with a vibrant swath of colors.
“Denver has a young spirit and atmosphere. When people travel, they want to experience different and new things, so I wanted to give them a special souvenir,” says von Humboldt. “I like bringing my multicultural background into all my projects and adapting it to its city but also wanted to keep Le Bilboquet’s dedication to authenticity.”
The new location welcomes visitors via a cozy lounge anchored by a striking fireplace and populated by custom blue velvet banquettes and low tables wrapped in a dark purple lacquer. From shaded sconces to moldings, deep orange and rich red tones offset cooler hues with a warm sense of elegance.
Paris is further channeled via details like brass detailing and smoked mirrored columns, while abundant natural light and wooden surfaces—including French doors leading to a patio lined with woven rattan chairs and tables—gently nod to nature for a subtle equilibrium. A 400-square-foot private events area is also featured onsite.
