The new flagship from the Goudvisch restaurant group, Polly, has debuted in North Amsterdam.
The company’s first concept to cross the river, Polly Goudvisch was envisioned by locally based interior design firm Studio Modijefsky to pay homage to the city’s café culture with a contemporary spin. “The interior is a nod to the traditional Amsterdam brown café,” says studio founder Esther Stam. “Coming here feels like visiting your favorite aunt who loves traditions, knows all the recipes for your favorite dishes, and hosts regular gatherings for all the family.”
Polly features wood-paneled walls accented by brass and copper details. Additional wooden focal points—like the twisted table legs—also convey the theme.
As patrons pass through the space, floors transition from wood into black and white terrazzo illuminated by light spheres descending from the ceiling, while warm earth tones are emitted from the bar’s eclectic mix of materials, which includes colored marble, wood, and copper. A marble fishtail panel punctuates the bar, echoing a motif that abounds in both 2D and 3D forms throughout the interior as well. Two pillars rise from the bar clad with the same burnt orange glossy tiles as the vestibule as well as circular plateaus made of textured glass and equipped with integrated lighting.
Polly’s open dining room is outfitted with intimate enclaves featuring wood tables detailed with high-gloss purple accents alongside custom sofas and colorful upholstered furniture that instills a less formal ambiance. Pink, purple, and red parasols also punctuate the terrace, which is wrapped in a custom, foldable wood windscreen to ensconce custom benches.
Studio Modijefsky is also behind the design of Goudvisch’s bar Moos in Spaarndammerbuurt.
