Restaurant group Nouvelle Garde has unveiled Brasserie des Prés in the Latin Quarter of Paris, France.
Crafted by London-based B3 Designers, the vibrant new addition marks the group’s fourth and largest restaurant, joining Brasserie Belanger, Brasserie Dubillot, and Brasserie Martin across the city.
The Latin Quarter, a historically rich hub for artists and literary figures, inspired the concept of Brasserie des Prés. Lush greenery adorns the front of the restaurant, which is lined with classic Parisian terrace seating shaded by striped awnings, and custom tiles frame the entrance for an impactful arrival.
“Brasserie des Prés has a unique floor print, so we’ve used the existing architecture to create layers of dining experiences,” says Mark Bithrey, founder of B3.
The ground floor welcomes patrons with a bar adorned with a brass gantry and coral leather bar stools. Bold paneled walls with illustrative tiles extend into the dining area, where produce display shelves sit above banquettes. A mosaic tiled floor complements brasserie-style chairs and ornate table lamps, while a heritage stone tower in the middle of the space serves as a focal point that passes through all three of Brasserie des Prés’ floors.
Moving to the first floor, the design draws inspiration from the neighborhood’s history and performing arts culture. Ruched curtains, soft furnishings, and tapestry-inspired backdrops offer a view into the patisserie chef’s prep area to create a theatrical atmosphere. A bar with bric-a-brac display frontage sits among antique mirrors, blonde timber paneling, and a centerpiece cabinet of curiosities that forms the rear wall.
The top floor is a boutique all-day lounge, complete with a vinyl record library. Stepping through velvet drapes reveals Grouvie, a 1970s-inspired pink and shiny secret bar. The space feels like an entirely different environment, with snug window seating, a mirror ceiling, neon, and hanging disco balls.
“Once again, Nouvelle Garde trusted us to take the brief of ‘classic French brasserie yet be modern and bold’ even further,” Bithrey adds. “We’ve created a feeling of community and delight, a welcoming backdrop to the great food offer served here. Brasserie des Prés is to be experienced; it’s so much more than the photos.”
